It’s made from a variety of sweet Pedro Ximenez grapes and is aged for years in traditional Solera’s system in oak barrels. Pedro Ximenez grapes, it’s exposed to sunlight for pacification thereof, softens the bouquet of this precious Sherry vinegar.
Its colour is composed of heavy mahogany; amber is reminiscent of Pedro Ximenez wine with which it is made. On the nose, apart from that is present immediately vinosities appear flavours roasted caramelized raisins and figs. On the palate his entry is smooth and sweet.
