Description:
Ratafia is a typical liqueur from the Catalan countryside and it is popular both as aperitif and digestif. In the old days every farm made its own ratafia and therefore there are many different recipes.
Green walnuts are picked in june and macerated for at least two months. The herbs and the spices are macerated separately and during different long time. After, they are blended and sugar, alcohol and water is added until reaching the exact volume of alcohol. Finally, the liqueur is aged in oak barrels for at least three months before it is filtered and bottled.
